The Greatest Matcha of All Time

It's no secret I love matcha. I've been getting matcha lattes since before they were cool. Way back in the day before I cut sugar, I used to get "green tea" (matcha) frappuchinos from Starbucks and they were the bomb. Now, I prefer my matcha hot and with cinnamon! The only place I get it cold is at True Food Kitchen... Their Matcha Horchata is heaven... ANYWAY - I have been attempting to make the perfect cup at home for a while now - and I finally did it!! And now I am sharing it with you! I have linked everything I use in the ingredients list. Enjoy!

Ingredients

1.5-2 cups Almond Milk (frothed with this milk frother)

3 TBSP Coconut Butter

1 tsp cerimonial grade Matcha Powder

2 TBSP Honey

1 tsp cinnamon

Top with a pinch of vanilla bean powder and cinnamon

First, I heat up the milk and coconut butter in a saucepan. I like to get it really hot, but not quite boiling! While that's happening, I put my honey, cinnamon, matcha and about a teaspoon of the warm almond  milk in my mug. I mix that all together well in the bottom of my mug with a fork!! (Those matcha whisks are too expensive and this works juuuuust fine for me!) 

Next, I pour my milk + coconut butter into a glass measuring bowl and froth it! Then I pour the frothed milk into my mug and froth that together to make sure the matcha is all mixed! 

I use a stick frother from world market, but I have linked one above from amazon!

I seriously love what I do. My only job this day was to photograph the cutest cocktails for the sweetest souls. Taylor and Logan (The She and Him of She + Him Bartending) are the best and serious magicians when it comes to mixing up the most delicious and beautiful cocktails!! These two have big hearts for the Lord and have a passion that is so evident and it shines through their personalities and business! They run their little Austin-based business out of New York City while Taylor pursues acting! Yauatcha | Upscale Chinese dining in Houston, complete with a Michelin Star

Houston peeps, if you haven't been to Yauatcha yet.. GO! The desserts, the dim sum, the cocktails...  It is so incredibly delicious! The Venison Puffs are my absolute favorite thing. 

This London based Michelin Star awarded restaurant has two locations in the US. Houston and Hawaii! To say we are lucky to have them here is an understatement :) I had a blast creating these gorgeous images for their brand. Enjoy!

Healthy Ice Cream Shakes | Banana Nut & Chocolate Chip

Okay, get your blenders ready and toss out your ice cream, because these delicious treats take their place perfectly! As an ice cream fanatic, I am aware this is a big claim. I myself make one of these close to once a day, and I never buy ice cream anymore! I absolutely cannot wait for you to try these healthy shakes out. Enjoy!

 


Banana Nut Shake

Ingredients:

2 Frozen Bananas

About 1/2- 1 cup of Unsweetened Almond Milk (Add in a little at a time to blender)

2 TBSP Honey

1 TSP Cinnamon

1/4 Cup of Walnuts

Directions:

Blend together until smooth! I like to freeze my bananas overnight in a tupperware container :) This is a super important step, and adds the creamy texture to the shake!! 

 


Chocolate Chip Shake

Ingredients:

The Greatest Dairy & Gluten Free Chicken Enchiladas Ever (With a Clean sauce recipe)

Wow. I never share recipes unless I have created them to be amazing for you guys, and let me tell you, these enchiladas are insane! The enchiladas themselves are amazing, but the STAR of the show is the sauce. I can't take credit for it. Cookie + Kate, you are an enchilada sauce genius. I double her recipe (linked at the bottom of this post) and keep a huge jar of it in my fridge for enchiladas, chicken, or anything I want to add a little flavor to!!

If you are wanting a guild free Mexican food night, these are your answer! Enjoy!

Chicken Enchiladas

Ingredients 

I package of Siete Tortillas

1 Can of Canellini Beans

1/2 cup of Corn (I just buy a bag of organic frozen corn)

1 lb boneless/skinless Chicken

2 Cups Bone Broth (I use one container of this one)

2 TBSP Chili powder 

1 TSP Garlic Powder

1 Tsp cayenne (optional)

3 TBSP Chopped fresh Cilantro

1 Lime (Juice)

Pinch of salt 

1 tsp pepper

2.5 Cups Of Enchilada Sauce (EASY Make Ahead Recipe Below!!!)

Directions

Place chicken, broth & dry spices in the crockpot for 5 hours on high! I recommend doing this late morning the day you are making the enchiladas!  Shred Chicken with two forks in the crockpot once the 5 hours is up! Mix in Beans, Corn, Lime Juice & Cilantro. I also put a small spoonful of homemade enchilada sauce into the mixture sometimes! So delicious! 

Now to assemble the enchiladas! Put a couple of spoonfuls of chicken mixture into a tortilla and wrap. Place in pan and continue like this until your pan is filled! (Each enchilada is side by side - don't stack) (I use a 4X4 glass pan, but have extra sometimes, and need a larger pan!)

Pour enchilada sauce all over enchiladas. Spread evenly with a spatula.

Bake on 350 for 30 Minutes!!

Rx Pizza | Colorful Cocktails

Happy Sunday, Ya'll. It's time for the other half of my shoot with Rx Pizza! (My personal favorite half) Cocktails are my FAVORITE think to shoot, hands down. Okay, I may say that about a ton of things, but seriously.... These drinks are A+++++++++

Rx is the best at pizza, cocktails and overall atmosphere. I had so much fun shooting this!! Personal favorite drink & image from this shoot is the Caffe del Fuego! They use a local coffee liqueur made in ATX! YUMMMM. But you can only get it at their Sunday brunch (THIS MORNING!) - So delicious!

Honey + Almond + Rosemary Baked Goat Milk Brie

Okay guys. This is so incredible. I'm serious. This is so perfect for a simple hors d'oeuvre, the main event on a wonderful charcuterie board, OR... lunch. Because when I tested this super easy baked brie recipe, that what I ate it for. Lunch. And it was perfect and the greatest thing ever. It is TOO EASY for you not to make it right now. Like go to the store now! Enjoy!

Ingredients

Yield : 1 mini baked brie

1 Wheel of Goat Milk Brie Cheese (I used Montchevre! You can get it at HEB. OR you can use whatever brie you like!)

1/4 Cup of Sliced Almonds

1 tsp Himalayan Pink Salt

1 medium sized sprig of rosemary

1/2 cup Honey

Crackers of your choice! I recommend simple sea salt crackers (I love Simple Mills!!)- or a sweeter kind if you're feelin' it!

Preheat your oven to 400 degrees. 

In a small pan over medium/high heat, toast your salt, rosemary and almonds together for 5 minutes. Set aside. 

Grab a creme brule ramekin (wide & shallow as pictured... If you don't have this, I recommend baking it in some kind of small pan with sides to avoid your ingredients getting everywhere). Pour half of your honey into the ramekin.

Get your wheel of cheese and slice the skin on the brie just slightly in a criss cross pattern on both sides (scroll down for picture). 

Place Brie in the honey filled ramekin. Top with Almond Mixture and remaining honey.

Bake for 10-12 minutes.

Enjoy!

 

Tip: I recommend using double the ingredients if you purchase a larger brie wheel!

 

Rx Pizza | Salads & Appetizers

If you follow me anywhere, you probably know that I have been working with Rx Pizza on some pretty sweet images. Today I will be sharing some of my favorite Salad + Appetizer images with you, and I think they will seriously make you want to drive there and order some food the second you see them! Literally every single thing I ate (and photographed) was amazing! I do have to point out a couple of favorites, though!!

Their Cobb Salad is to die for. It is so hearty, and delicious... Because you can go wrong with bacon and avocado!

The fried cheese - HEAVEN! Rx does their mozzarella homemade in house, and this is a must-order when you visit them! 

I love this little gem in Downtown Bryan. Rx, it has been such a joy working with them. I can't wait to share the other half of this shoot! Cocktails anyone?!

Raspberry + Grapefruit Rosé Sangria

Summer is here! Not officially, but it sure feels like it in Texas... I'm a huge fan of wine. I like it all! I love a good cab, but when I'm feeling something sweet and sparkly, I like to make wine even better... Yes, SANGRIA! I love rosé, so that is the base of this drink! I created a clean, healthy blend that you will not want to miss out on making for any outdoor party or for a weekend by the pool! Or on your couch Monday-Thursday, that works too. ;)

 

Ingredients:

1 Bottle of Rosé

Juice of 1 Whole Grapefruit

1 Grapefruit, Sliced

2 Cups of Raspberries

5 TBSP Honey 

4 TBSP Water

20 Oz of Club Soda

Optional: Mint Leaves for Garnish, Oranges, Strawberries, Peaches... ALL THE FRUITS

 

First, put the honey, water & raspberries in a small saucepan. Put the burner on Medium Heat & stir occasionally until the mixture begins to lightly bubble. Set aside and let cool for 5 minutes.

Next, slice up your grapefruit (& any other fruit of your choosing) and put it in your desired container/pitcher. Pour in the Rose, Grapefruit juice, club soda & Raspberry mixture.

Mix everything together with a wooden spoon, and place pitcher in the fridge overnight (If not, least 2 hours. But it tastes better when you let everything sit together for a while!)

Healthy, Fruity Ice Pops for Every Occasion

These easy-to-make ice pops are light, colorful and perfect for that sweet craving! They are super clean & easy to make! I will also be sharing a boozy option to serve any adult who likes fruity drinks – versatile pops for everyone to enjoy? Yes please! The inspiration for these pops came from some of my favorite flavor combinations : Banana + Coconut & anything Citrus + Mint! The Erickson Woodworks styling board in Stormy Silver really makes the colors shine!

Both recipes make 12 Ice Pops 

You will need an ice pop maker! I used this one

 

Banana + Coconut + Blueberry Ice Pop

Ingredients

1 12oz Can of Coconut milk
1 Banana
1 Handful of Blueberrys
3 TBSP Maple Syrup
Optional : ½ cup Coconut Rum

In a blender, pour in the milk, banana and maple syrup. Add the rum here too, if you choose. Blend until there are no chunks of banana and everything is combined.
Now that you have your mixture, pour it into your ice pop mold. Fill each about ¾ of the way. Add in the blueberries. Freeze overnight!

Grapefruit + Pomegranate + Mint Ice pop

Ingredients

Juice of 1 Grapefruit
1 TBSP Lemon Juice
¼ Cup of Water
1 TBSP Maple Syrup
1 Handful of Pomegranate Seeds
A few Mint Leaves
Optional: 1/4 Cup of Tequila

Combine all of your liquid ingredients into a blender until well mixed. Add in a handful of mint leaves to the mixture and pulse 3 to 4 times. Pour this mixture into your ice pop molds, add in pomegranate seeds. Freeze over night!

Organic Southwestern Quinoa

It's here, it's finally here!! When I cooked this yummy dish on my Instagram Story a couple of weeks back, I got SO many messages asking for the recipe! Now that it's perfected, I am finally posting it.

Disclaimer : I used to hate quinoa. As my good friend, Lauren, would say... It tasted like feet!! Lol! But honestly guys, this is the most flavorful dish. Complete with peppers, onions, avocado and cilantro, It is so delicious! 

Recipe

2 cloves of garlic

1/2 a red onion

1 red bell pepper

2 jalapeños

1 cup organic corn (optional!)

1 avocado

1/2 cup cilantro

1 TBSP cumin

1 tsp salt

1 tsp black or white pepper

1 cup of quinoa 

1 cup of bone broth ( I use THIS one. Make sure your broth is CLEAN!!!!!)

2 TBSP olive oil

Juice of 1 lime

Optional: 1 can of black beans, drained

* top with chèvre

 

First, you are going to want to prep all your peppers, onion and garlic! You have a lot of chopping to do, and it's best to chop everything first! Grab a large, deep pan with a lid. Sauté your garlic and onions in olive oil over medium heat until the onions loose a bit of color (about 2 min.) Add in the peppers and corn (I use Trader Joes organic frozen corn). 

** another delicious option to add in here is black beans! 

Sauté and cook for about 5 minutes. Turn to low/medium heat.

Add in the bone broth and your seasonings and mix until combined. Stir in the quinoa until it is well mixed. Cover your pan, and let sit for 20 minutes.

Once your 20 minutes are up, uncover your pan and it should be fluffy like the pictures! Stir in your lime juice, diced avocado & cilantro and serve immediately! I LOVE topping it with a dollop of chèvre!

This dish heats up so well, and a whole pan will get me 2 or 3 servings of leftovers!

Real Life : Square Space deleted the entire post I had written up for this right as I was about to press 'save.' BUT, I am not letting that get me down! On to round TWO of typing this!!

Everything Simple Mills makes is awesome, and sometimes I just want EASY and SWEET. But I don't enjoy sacrificing my well-being every time I get a craving! I only sometimes buy their frosting, which does include organic cane powdered sugar, but. Hey, can you blame me?

Every one of their mixes are great (Including their Pizza Crust & Pancake Mix), but I am partial to their chocolate cake. :)

To Spice up their Chocolate Cupcakes, here's what I do :

add 1 extra TBSP of oil

1 tsp of cayenne

1 TBSP of Cinnamon

Doing this makes these babies taste like mexican hot chocolate, and I love it!

Dairy & Sugar Free Cinnamon Hot Chocolate + Against All Grain Marshmallows

I am so excited about this recipe, I can hardly stand it! If you have been following me on any social medias lately, you might know that I purchased the Cookbook, Celebrations by Danielle Walker (Against All Grain). She is incredible and her story is incredible! Head over to her blog and support this awesome lady! 

In Celebrations, Danielle has an incredible Peppermint Hot Chocolate and Marshmallow recipe that Inspired this blog post. I hope you all enjoy!

Cinnamon Hot Chocolate

2 Cups of Almond Milk (I use unsweetened MALK)

1 Can (13.5oz) Full Fat Coconut Milk

3 oz of dark or Unsweetened Chocolate Chopped

2 TBSP Unsweetened Cocoa

3/4 Cup of Pure Maple Syrup

1 tsp Cinnamon

Combine Milks into a saucepan and heat on medium/high heat until simmering. Add in your remaining ingredients and turn your heat on low. Stir until creamy! Top it off with some Marshmallows by Against All Grain's Danielle Walker

 

 

 

Baked Cilantro + Feta Sweet Potato Fries

Okay, so before we talk about the food, lets talk about the background - Something a little different from my norm, and I am LOVING IT. With the help and advice of my sweet friend, Emma, I actually created and painted this background all by myself! Eeeek! I'm so proud of myself and plan on making more this week!!

Now to the food... If you know me, you know I can't get enough of all things cilantro + lime. I also Love sweet potatoes and think they are the best SAVORY! Don't get me wrong, I love a good sweet potato with cinnamon, but THIS is my favorite.

 

 

 

 

In this recipe I sneak in a favorite ingredient of mine that is so incredibly good for your health: Turmeric! Read the benefits of eating turmeric HERE. (you will be amazed and really should read it)

 

Ingredients

2 Small-Medium Organic Sweet Potatoes

1 1/2-2 TBSP Organic Olive Oil or Melted Coconut Oil

2 TBSP Chopped  Organic Cilantro

1/2 Cup Organic Feta or Goat Cheese

1 TBSP Organic Turmeric 

1 Organic Lime

Salt & Pepper to Taste

 

First, preheat your oven to 375. Next, peel and slice your sweet potatoes so that they look like fries! The thinner, the better (crispier). Toss them in a bowl with the oil, salt & pepper, turmeric and HALF of your chosen cheese. Once your fries are completely covered, place them evenly on to a baking sheet. The more spread out they are, the better they will cook! Put those in your oven for about 25-30 minutes. Once those are done, plate them and top with your lime juice, cilantro and remaining cheese!!

So simple. So delicious. I am in love. 

 

 

Organic & Clean Pumpkin Pie

I've got an awesome autumn classic for you guys today! Pumpkin Pie is a staple at my family's thanksgiving, and I thought I would put a little spin on it to make it clean and organic for you to try! It is SO SO good. Pie that is good and good for you?! Yes please! (This recipe is gluten, dairy and refined sugar free! All products I recommend are Non GMO.)

Ingredients (Filling)

1 15oz Can of Pumpkin Pure

3/4 Cup of Coconut Sugar

1/2 tsp Salt

1 1/2 tsp Cinnamon

1 tsp Cloves

1 tsp Nutmeg

2 eggs

1 1/2 cups of Unsweetened Coconut (or Almond) Milk

 

1) Preheat your oven to 425°F

2) Mix together your eggs, pumpkin, coconut sugar, salt and spices in a large bowl until well blended

3) Slowly stir in your milk of choice

4) Pour Mixture into your pie pan (or individual ramekins!)

5) Bake in the preheated oven for 15 minutes. Then, without opening your oven, turn your temperature down to 350 and bake for another 30-40 minutes.

6) Let it cool and refrigerate!

I like doing this recipe in individual ramekins with or without crust! Below is a clean crust option for you that is delicious! Enjoy!

Pie Crust:

3 cups of almond flour

3 TBSP of coconut oil

1/4 tsp salt

1 large egg

Put all of these ingredients in a food processor or blender, and mix until just combined! Pack into ramekins or pie pan!

Summertime Treat | Organic Creme Brulee

Are you feelin' fancy? ME TOO. I am ecstatic about this post! This creme brulee is my absolute favorite recipe so far on this blog. Why? Because creme brulee is my all time favorite dessert! As you all know, a little over a year ago, I began my whole clean eating + clean beauty + clean living thing. That means no more processed sugary sweets that my tastebuds once dearly loved (but my body hated). SO now I love it when I can spin an old favorite into something clean and healthy to safely enjoy! And I have finally done it with my favorite dessert ever!! So without further adieu.... A Berry + Vanilla Bean Creme Brulee Recipe!! 

Appliances You Need:

- Culinary Torch

- 5 Small Ramekins

Ingredients

1/2 Cup of Organic Coconut Sugar

1 Can of Organic Coconut Milk (unsweetened)

2 Organic Vanilla Beans

5 Organic Egg Yolks

Organic Raspberries (optional)

Instructions

First, preheat your oven to 325. Take a small sauce pan and pour in the coconut milk. Cut the vanilla beans open and scrape the pulp in to the milk. Stir briefly and heat over low to medium heat until it begins to simmer. 

While that is heating up, whisk your egg yolks (remember JUST the yolks) and coconut sugar together in a glass mixing bowl. This will be brown in color because of the coconut sugar!

Once your milk is simmering, take it off the burner and SLOWLY pour into your egg mixture and mix simultaneously. You must pour slowly or just little bits at a time so that the hot milk does not begin to cook the eggs! Once this is done, you have your creme brulee mixture!! Pour this into your 5-6 ramekins.

Now it is time to prepare your bath. First grab a glass casserole pan. Fill it up a quarter of the way with boiling water. Place ramekins inside the casserole dish. This helps to evenly cook your custards!!

Bake in the oven for 35-40 minutes. To tell when they are done, shake the dish, and if the whole custard jiggles evenly and stays in place, they are DONE! Yeah I know. Real technical terms we are using here! LOL.

Chill for about an hour. When you are ready to serve them, sprinkle about a tablespoon of coconut sugar on top and use a culinary torch to semi-burn the sugar! When I make these for myself, I just store them in my fridge and sprinkle the sugar an torch them as I eat them. The sugar is much better fresh!

And there you have it. The greatest dessert of life. Seriously. Enjoy!

Kale Yeah, Green Juice + The Best Orange Juice Ever

Okay you juicing (or wanna-be juicing) fools!! I'm giving you a little info today on the health benefits of juicing and how I make juice on a weekly basis! I am also including TWO recipes for ya!!! WOOO!! Lets get started.

First of all- I should probably include a disclaimer that in order to juice, you probably need to purchase a juicer... IF you would like to be like me and purchase the one I have, click HERE! The thing with juicers (and a lot of things in this life) is that you get what you pay for!! Mine is on the pricey side, but it was a gift! And I am super cheap! So I did a little research for you guys... and HERE is a link for a cheaper option on Amazon. It has a 4 star review and is only about 60 bucks! I will say though, my juicer is the bomb.com. There is ZERO pulp in the juice you make and it handles apples and carrots like a champ!! 

Now that you've got your juicer, we are gonna go over some health benefits of raw juicing and the importance of purchasing organic! Yay! AND SO MUCH MORE!!! My two go-to recipes are below. I give you guys an awesome green juice and an orange juice with a tropical twist! GET EXCITED.

Kale Yeah, Green Juice!

1 bunch of kale

3 limes (peeled)

1 whole pineapple

3 kiwis

3 green apples

4 medium oranges (peeled)

This green juice is awesome, and my favorite part is the limes. This makes about a gallon of juice and it is incredible! 

The Best Orange Juice Ever

10 medium oranges (peeled)

1 whole pineapple

2 or 3 mangos

This awesome orange juice is a standard in my fridge. I really love it!! 

Really Important QUICK tip for ya, I store ALL of my juices and liquids... and leftovers... and everything! in glass bottles, jugs, and tupperware. Plastic is just NO BUENO.
