Mini Autumn Apple Cinnamon Spice Galettes


Y’all, it’s been a hot minute since I have done a recipe blog post. Honestly, these kind of posts are just for ME! I have a personal passion of cooking and baking and sometimes I have recipes I never want to let go of! Those are the ones that end up on my website. And these little babies are so stinking good and will show up at every holiday & party for the rest of the year that I attend.

Do not let the term galette intimidate you. It’s basically just a little pie crust fruit pastry thingy. They aren’t messy, and you can store them easily in a tupperware in the fridge. They are delicious warm with a scoop of ice cream… OR you can just grab them out of the fridge like my husband does and eat them by hand! LOL.


Makes 4-5 mini gallettes

Ingredients for the Crust

6 TBSP Unsalted Butter

1/2 tsp Salt

4-5 TBSP Ice Water

1 TBSP Maple Sugar

1 Cup Bread Four (I love King Arthur’s Brand!)

Optional Tip : make an egg wash with 1 egg white and 2 tbsp of water to brush onto the crust just before baking

Ingredients for filling

2-3 Large Gala or Red Delicious Apples, cut thin with the skin on

1 1/2 tsp cinnamon

1 TBSP Flour

1/2 tsp of Pumpkin Pie Spice

2 TBSP Honey

Important Topping : 5 tbsp maple + 5 tbsp coconut sugar mixed. Top on to each galette before baking.

Crust Instructions :

Mix together flour and salt in a large bowl.

Cut in butter until your mixture is like pebble sized crumbs with a pastry blender like this one.

Add ice water until your dough comes together and you can form it into a ball.

Cut dough ball in to 4 or 5 even pieces. Roll each piece out on a floured surface in to little circles.

(Or one big circle if you want to make a pie or something with this crust! it is SOOO GOOD)

Filling Instructions

Preheat your oven to 350 degrees F.

Cut your apples using a spiral apple cutter & corer like this one! Or just cut and core them super thin by hand.

Place cut apples in a large bowl.

Coat them with honey, cinnamon, pumpkin pie spice, flour and a pinch of salt. I mix this well by hand!

Place a dollop of your apple filling on to each circle of dough. Give each one a healthy sprinkle of your Maple + Coconut Sugar topping.

Wrap and pinch the outside dough around your filling. See photos as an example! This part is not perfect! It is sometimes messy but they look so beautiful and imperfect!

Place galettes on an oiled & floured baking sheet

Brush your egg wash onto the crust.

Bake on 350 for 15-20 minutes.
