Are you feelin' fancy? ME TOO. I am ecstatic about this post! This creme brulee is my absolute favorite recipe so far on this blog. Why? Because creme brulee is my all time favorite dessert! As you all know, a little over a year ago, I began my whole clean eating + clean beauty + clean living thing. That means no more processed sugary sweets that my tastebuds once dearly loved (but my body hated). SO now I love it when I can spin an old favorite into something clean and healthy to safely enjoy! And I have finally done it with my favorite dessert ever!! So without further adieu.... A Berry + Vanilla Bean Creme Brulee Recipe!!
Appliances You Need:
1/2 Cup of Organic Coconut Sugar
1 Can of Organic Coconut Milk (unsweetened)
5 Organic Egg Yolks
Organic Raspberries (optional)

First, preheat your oven to 325. Take a small sauce pan and pour in the coconut milk. Cut the vanilla beans open and scrape the pulp in to the milk. Stir briefly and heat over low to medium heat until it begins to simmer.
While that is heating up, whisk your egg yolks (remember JUST the yolks) and coconut sugar together in a glass mixing bowl. This will be brown in color because of the coconut sugar!
Once your milk is simmering, take it off the burner and SLOWLY pour into your egg mixture and mix simultaneously. You must pour slowly or just little bits at a time so that the hot milk does not begin to cook the eggs! Once this is done, you have your creme brulee mixture!! Pour this into your 5-6 ramekins.
Now it is time to prepare your bath. First grab a glass casserole pan. Fill it up a quarter of the way with boiling water. Place ramekins inside the casserole dish. This helps to evenly cook your custards!!
Bake in the oven for 35-40 minutes. To tell when they are done, shake the dish, and if the whole custard jiggles evenly and stays in place, they are DONE! Yeah I know. Real technical terms we are using here! LOL.
Chill for about an hour. When you are ready to serve them, sprinkle about a tablespoon of coconut sugar on top and use a culinary torch to semi-burn the sugar! When I make these for myself, I just store them in my fridge and sprinkle the sugar an torch them as I eat them. The sugar is much better fresh!
