Tomato Basil Fettuccine

Holy. Cow. I'm serious guys. Make this NOW! Go to Kroger. Get the ingredients. And make it for dinner tonight. AH! This is seriously the perfect pasta. If you know me well, you know that I should have been born Italian. Pasta is my vice. And this one is my favorite creation yet! I modified it to fit my organic, gluten-free, sugar-free standards. If I might add, this version is totally Cody approved! He actually is just as in love with it as I am. BUT you could use wheat pasta and regular produce if you wish! On to the recipe!


  • 1/2 pound gluten-free fettuccine
  • 2 tablespoons organic olive oil
  • 5 large organic garlic cloves, thinly sliced
  • 2 pounds organic cherry or grape tomatoes
  • 1 cup organic basil leaves, roughly chopped
  • 3/4 teaspoon sea salt, plus more for seasoning
  • 1/2 cup all-natural organic grated parmesan, plus more for garnish
  • 2 hormone-free chicken breasts 
  • garlic powder



We are going to start of by cooking your noodles! Bring a large pot of water to boil and toss in your pasta and a handful of salt. Cook your noodles "aldente." And for those of you who are like me and are gonna need to google what that means, let me save you the trouble! Aldente means cooking your pasta until JUST before they are fully cooked. Once your noodles are ready, take them out of your pot with tongs and place into a colander. Reserve your cooking liquid! You will need it later!

While your pasta is cooking, you can add your garlic & olive oil to a very large skillet. It should be on medium heat and you need to cook the garlic for about 2 minutes. Then turn your heat to medium-high and add in your tomatoes and salt. Cook those for about 2 minutes. Add 1/2 cup of your cooking liquid to your skillet. Bring this mixture to a boil and then reduce it to a simmer. A few of your tomatoes should start to burst. (If they don't, just smash a few of them! You don't want all of them to be smashed!) Add your pasta in to the skillet and cook for about 2 more minutes! 

Turn your heat off and add in your basil, parmesan, and a little salt and pepper. Toss and serve with a little grated parmesan on top!! 

Tip: To add something amazing to this dish, season two chicken breasts in olive oil, garlic powder, salt, pepper, and basil. Place them on a baking sheet and cook those in your oven on 375 for about 25-30 minutes. Serve with your pasta!! The man in your life will thank you for adding in a little protein!
