Okay. So ever since I began my journey of the whole all organic, gluten free, sugar free, soy free thing, I have been so concerned about how I could keep sweets in my diet. (because lets be honest, without sweets, life is sad) Specifically cookies. I love cookies. Especially chewy ones! So it has been my mission to find the perfect cookie recipe that is also good for you! AND… I DID! Huge thanks to my Mimi who found a similar recipe on pinterest. I experimented with hers and it led me to this! And spoiler, It’s Incredible.
Before we get started, I want to give you a few tips on everything you can do with this awesome recipe! You can:
- nix the pecans and replace them with unsweetened soy free chocolate chips (a personal favorite)
- add any kind of dried berries (make sure you get some that have no added sugars or sweeteners!)
- add in a tsp of nutmeg and all spice (YUM)
- nix the cinnamon and pecans and just add in chopped almonds and an extra tbsp of vanilla
- any cookie dough fans out there?!?! Since this recipe is eggless, this is the perfect recipe to mix together and just pop in the fridge to eat with a spoon later! I LOVE doing this.
Those are just a few of the MANY things you can do with this recipe! Because of this, I have named this The Everything Cookie! I encourage you all to experiment and try new things! Lets get started:
3 cups of organic almond flour
1/4 tsp baking soda (aluminum free)
2 tsp of organic cinnamon
1/2 tsp of salt
1/2 cup of copped pecans
5 tbsp of pure honey
1 stick of unsalted organic butter (melted)
1 tbsp of organic vanilla
Start by putting all of your wet ingredients in a sauce pan and melt over medium heat. While that is melting together, mix your dry ingredients in a large bowl! When your wet ingredients are all melted together, pour them into your dry ingredients and mix. This should be fairly easy to do with a spatula. Once that is done, roll small pieces of cookie dough into balls and place them on your cookie sheet. I love using an ice cream scoop for this part! It is way less messy.
Once your done making your cookie dough balls, place your baking sheet in the oven on 350 degrees for 12-15 minutes! I usually set my timer for 12, open my oven, and press down the cookies with a fork! Then I close the oven for the remaining 3 minutes. Let them cool and enjoy!
